A few days ago, Amber (a new Plover user whom some of you might know from the Google group) posted some practice sentences to the Plover Wiki. I'll repost them here to get people going. Post your own practice sentences below, and if they're good we'll incorporate them into additional Wiki pages or Steno 101 lessons.

From the Wiki page: "This set of 21 sentences uses the 100 or so most common English words, comprising between 50% to 65% of all words used in English."

What Theory is being used here?

It's mostly NYCI theory, which is related to StenEd. Though it's got a fair number of my own additions as well.
